Ingredients

  • Halal chicken thighs - 300 grams
  • Achiote paste - 30 grams
  • Fresh orange juice - 60 ml
  • Lime juice - 15 ml
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Banana leaves - 2 pieces (or aluminum foil as substitute)
  • Corn tortillas - 4 pieces
  • Red onion - 1 small, thinly sliced
  • Cilantro - 2 tablespoons, chopped
  • Radishes - 4, thinly sliced
  • Avocado - 1, sliced

Steps

  1. In a bowl, combine achiote paste, orange juice, lime juice, minced garlic, cumin, salt, and black pepper to create a marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 1 hour, or preferably overnight.
  3. Preheat the oven to 180°C (350°F). If using banana leaves, soften them by briefly passing over an open flame or hot water.
  4. Place the marinated chicken on a piece of banana leaf (or aluminum foil) and wrap it tightly. Repeat with the second piece of chicken.
  5. Place the wrapped chicken in a baking dish and bake for about 1 hour until the chicken is tender and cooked through.
  6. Remove from the oven and let the chicken rest for 10 minutes before unwrapping.
  7. Shred the chicken using two forks and mix it with the juices from the wrapping.
  8. Warm the corn tortillas on a skillet for about 30 seconds on each side.
  9. Assemble the tacos by placing shredded chicken on each tortilla, topped with sliced red onion, cilantro, radishes, and avocado slices.
  10. Serve immediately and enjoy your Pibil Tacos!
