Ingredients
- Halal chicken thighs - 300 grams
- Achiote paste - 30 grams
- Fresh orange juice - 60 ml
- Lime juice - 15 ml
- Garlic - 2 cloves, minced
- Cumin powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Banana leaves - 2 pieces (or aluminum foil as substitute)
- Corn tortillas - 4 pieces
- Red onion - 1 small, thinly sliced
- Cilantro - 2 tablespoons, chopped
- Radishes - 4, thinly sliced
- Avocado - 1, sliced
Steps
- In a bowl, combine achiote paste, orange juice, lime juice, minced garlic, cumin, salt, and black pepper to create a marinade.
- Add the chicken thighs to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 1 hour, or preferably overnight.
- Preheat the oven to 180°C (350°F). If using banana leaves, soften them by briefly passing over an open flame or hot water.
- Place the marinated chicken on a piece of banana leaf (or aluminum foil) and wrap it tightly. Repeat with the second piece of chicken.
- Place the wrapped chicken in a baking dish and bake for about 1 hour until the chicken is tender and cooked through.
- Remove from the oven and let the chicken rest for 10 minutes before unwrapping.
- Shred the chicken using two forks and mix it with the juices from the wrapping.
- Warm the corn tortillas on a skillet for about 30 seconds on each side.
- Assemble the tacos by placing shredded chicken on each tortilla, topped with sliced red onion, cilantro, radishes, and avocado slices.
- Serve immediately and enjoy your Pibil Tacos!
