Ingredients

  • White fish fillets (like tilapia or snapper) - 300 grams
  • Achiote paste - 60 grams
  • Fresh orange juice - 60 milliliters
  • Lime juice - 30 milliliters
  • Garlic - 2 cloves, minced
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Banana leaves - 2 large pieces
  • Red onion - 1 small, thinly sliced
  • Fresh cilantro - 2 tablespoons, chopped
  • Avocado - 1 medium, sliced

Steps

  1. In a bowl, combine achiote paste, fresh orange juice, lime juice, minced garlic, salt, and black pepper to create a marinade.
  2. Add the fish fillets to the marinade, ensuring they are thoroughly coated. Cover and refrigerate for at least 30 minutes.
  3. Preheat your oven to 180°C (350°F).
  4. Lay out the banana leaves on a flat surface and place the marinated fish in the center of each leaf.
  5. Top the fish with slices of red onion and sprinkle with chopped cilantro.
  6. Wrap the banana leaves around the fish to create a sealed parcel and place them on a baking tray.
  7. Bake in the preheated oven for 25-30 minutes, until the fish is cooked through and flakes easily.
  8. Carefully unwrap the banana leaves and serve the fish with avocado slices on the side.
