- Black pepper - ½ teaspoon
- Banana leaves - 2 large pieces
- Red onion - 1 small, thinly sliced
- Fresh cilantro - 2 tablespoons, chopped
- Avocado - 1 medium, sliced
Steps
- In a bowl, combine achiote paste, fresh orange juice, lime juice, minced garlic, salt, and black pepper to create a marinade.
- Add the fish fillets to the marinade, ensuring they are thoroughly coated. Cover and refrigerate for at least 30 minutes.
- Preheat your oven to 180°C (350°F).
- Lay out the banana leaves on a flat surface and place the marinated fish in the center of each leaf.
- Top the fish with slices of red onion and sprinkle with chopped cilantro.
- Wrap the banana leaves around the fish to create a sealed parcel and place them on a baking tray.
- Bake in the preheated oven for 25-30 minutes, until the fish is cooked through and flakes easily.
- Carefully unwrap the banana leaves and serve the fish with avocado slices on the side.
