Ingredients

  • Pork shoulder - 300 grams
  • Achiote paste - 2 tablespoons
  • Orange juice - 60 ml
  • Lime juice - 30 ml
  • Garlic - 2 cloves, minced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Banana leaves - 2 large pieces
  • Gluten-free burger buns - 2
  • Avocado - 1, sliced
  • Red onion - 1/2, thinly sliced
  • Cilantro - 2 tablespoons, chopped
  • Radishes - 4, thinly sliced
  • Lime wedges - for serving

Steps

  1. In a bowl, combine the achiote paste, orange juice, lime juice, minced garlic, salt, and black pepper to create a marinade.
  2. Cut the pork shoulder into chunks and coat it well with the marinade. Cover and refrigerate for at least 1 hour, preferably overnight.
  3. Preheat the oven to 160°C (320°F).
  4. Lay the banana leaves on a baking dish and place the marinated pork in the center of the leaves. Fold the leaves over the pork to create a parcel.
  5. Cover the dish with aluminum foil and bake in the preheated oven for about 2 hours, until the pork is tender.
  6. Once cooked, remove the pork from the oven and let it rest for 10 minutes before shredding it with two forks.
  7. Toast the gluten-free burger buns lightly on a skillet or grill.
  8. Assemble the burgers by placing a generous amount of shredded pork on the bottom bun, and top with avocado slices, red onion, cilantro, and radish slices.
  9. Serve with lime wedges on the side.
