- Pork shoulder - 300 grams
- Achiote paste - 2 tablespoons
- Orange juice - 60 ml
- Lime juice - 30 ml
- Garlic - 2 cloves, minced
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Banana leaves - 2 large pieces
- Gluten-free burger buns - 2
- Avocado - 1, sliced
- Red onion - 1/2, thinly sliced
- Cilantro - 2 tablespoons, chopped
- Radishes - 4, thinly sliced
- Lime wedges - for serving
Steps
- In a bowl, combine the achiote paste, orange juice, lime juice, minced garlic, salt, and black pepper to create a marinade.
- Cut the pork shoulder into chunks and coat it well with the marinade. Cover and refrigerate for at least 1 hour, preferably overnight.
- Preheat the oven to 160°C (320°F).
- Lay the banana leaves on a baking dish and place the marinated pork in the center of the leaves. Fold the leaves over the pork to create a parcel.
- Cover the dish with aluminum foil and bake in the preheated oven for about 2 hours, until the pork is tender.
- Once cooked, remove the pork from the oven and let it rest for 10 minutes before shredding it with two forks.
- Toast the gluten-free burger buns lightly on a skillet or grill.
- Assemble the burgers by placing a generous amount of shredded pork on the bottom bun, and top with avocado slices, red onion, cilantro, and radish slices.
- Serve with lime wedges on the side.
