- Lime juice - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegetable broth - 250 milliliters
- Avocado - 1, sliced (for serving)
- Tortillas (corn or flour) - 4 (for serving)
Steps
- In a blender, combine tomatillos, cilantro, jalapeño, garlic, lime juice, salt, and black pepper. Blend until smooth and set aside.
- Heat olive oil in a large skillet over medium heat. Add the blended tomatillo mixture and cook for 5 minutes, stirring occasionally.
- Add the vegetable broth to the skillet and bring the sauce to a simmer.
- Season the fish fillets with salt and pepper, then gently place them in the sauce. Cover and cook for 8-10 minutes, or until the fish is cooked through and flakes easily with a fork.
- Serve the fish with the sauce over warm tortillas, garnished with avocado slices and additional cilantro if desired.
