  • Jalapeño pepper - 1, seeds removed and chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable broth - 250 milliliters
  • Avocado - 1, sliced (for serving)
  • Tortillas (corn or flour) - 4 (for serving)

Steps

  1. In a blender, combine tomatillos, cilantro, jalapeño, garlic, lime juice, salt, and black pepper. Blend until smooth and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add the blended tomatillo mixture and cook for 5 minutes, stirring occasionally.
  3. Add the vegetable broth to the skillet and bring the sauce to a simmer.
  4. Season the fish fillets with salt and pepper, then gently place them in the sauce. Cover and cook for 8-10 minutes, or until the fish is cooked through and flakes easily with a fork.
