Ingredients

  • Fish fillets (such as tilapia or snapper) - 300 grams
  • Achiote paste - 50 grams
  • Orange juice - 60 ml
  • Garlic - 2 cloves, minced
  • Lime juice - 30 ml
  • Olive oil - 2 tablespoons
  • Cilantro - 10 grams, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Onion - 1 small, sliced
  • Bell pepper - 1 small, sliced
  • Tomato - 1 medium, diced

Steps

  1. In a bowl, mix achiote paste, orange juice, garlic, lime juice, salt, and black pepper to create a marinade.
  2. Add the fish fillets to the marinade, ensuring they are well-coated. Allow to marinate for at least 15 minutes.
  3. In a skillet, heat olive oil over medium heat. Add sliced onion and bell pepper, sautéing until softened, about 5 minutes.
  4. Remove the vegetables from the skillet and set aside. In the same skillet, add the marinated fish and cook for about 4 minutes on each side or until the fish is cooked through and flakes easily.
  5. Add the sautéed vegetables and diced tomato to the skillet with the fish, cooking for an additional 2-3 minutes until heated through.
  6. Garnish with chopped cilantro before serving. Enjoy your Pescado en Salsa de Achiote with rice or tortillas.
