Ingredients

  • White fish fillets (e.g., tilapia or snapper) - 300 grams
  • Olive oil - 2 tablespoons
  • Lime - 1, juiced
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1, sliced
  • Zucchini - 1 small, sliced
  • Cherry tomatoes - 150 grams, halved
  • Red onion - 1/2, thinly sliced
  • Cilantro - 2 tablespoons, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut two large pieces of parchment paper, approximately 30x40 cm each.
  3. In a bowl, combine olive oil, lime juice, minced garlic, salt, and black pepper.
  4. Place a fish fillet in the center of each parchment paper piece and drizzle half the olive oil mixture over each fillet.
  5. Layer the sliced bell pepper, zucchini, red onion, and cherry tomatoes on top of the fish.
  6. Sprinkle chopped cilantro over the vegetables and fish.
  7. Fold the parchment paper over the fish and vegetables, creating a sealed packet by folding the edges tightly.
  8. Place the packets on a baking sheet and bake in the preheated oven for 20 minutes.
  9. Remove from the oven, let cool for a minute, then carefully open the packets to avoid steam.
  10. Serve immediately, optionally with additional lime wedges.
