- White fish fillets (e.g., tilapia or snapper) - 300 grams
- Olive oil - 2 tablespoons
- Lime - 1, juiced
- Garlic - 2 cloves, minced
- Red bell pepper - 1, sliced
- Zucchini - 1 small, sliced
- Cherry tomatoes - 150 grams, halved
- Red onion - 1/2, thinly sliced
- Cilantro - 2 tablespoons, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Preheat the oven to 200°C (400°F).
- Cut two large pieces of parchment paper, approximately 30x40 cm each.
- In a bowl, combine olive oil, lime juice, minced garlic, salt, and black pepper.
- Place a fish fillet in the center of each parchment paper piece and drizzle half the olive oil mixture over each fillet.
- Layer the sliced bell pepper, zucchini, red onion, and cherry tomatoes on top of the fish.
- Sprinkle chopped cilantro over the vegetables and fish.
- Fold the parchment paper over the fish and vegetables, creating a sealed packet by folding the edges tightly.
- Place the packets on a baking sheet and bake in the preheated oven for 20 minutes.
- Remove from the oven, let cool for a minute, then carefully open the packets to avoid steam.
- Serve immediately, optionally with additional lime wedges.
