Ingredients

  • Nopales (cactus pads) - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Tomato - 1 medium, diced
  • Lime juice - 2 tablespoons
  • Cilantro - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the nopales under cold water, then slice them into strips.
  2. In a pan, heat 1 tablespoon of olive oil over medium heat and add the nopales. Cook for 5-7 minutes until they become tender and slightly translucent.
  3. Remove the nopales from the pan and set aside. In the same pan, add the remaining olive oil and sauté the diced onion and minced garlic until fragrant and translucent, about 3-4 minutes.
  4. Add the diced tomato to the pan and cook for another 3 minutes until softened.
  5. Season the fish fillets with salt and black pepper, then place them in the pan with the sautéed vegetables. Cook for about 3-4 minutes on each side, or until the fish flakes easily with a fork.
  6. Add the cooked nopales back to the pan, drizzle with lime juice, and sprinkle with chopped cilantro. Stir gently to combine and heat through for an additional 2 minutes.
  7. Serve immediately, garnished with extra cilantro and lime wedges if desired.
