  • young green jackfruit - 400 grams, drained and rinsed
  • olive oil - 2 tablespoons
  • lime juice - 2 tablespoons
  • garlic powder - 1 teaspoon
  • smoked paprika - 1 teaspoon
  • cumin - 1/2 teaspoon
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • fresh cilantro - 2 tablespoons, chopped
  • avocado - 1 medium, diced
  • red onion - 1/4 cup, finely diced
  • tomato - 1 medium, diced
  • jalapeño - 1 small, minced (optional)
  • lime - 1, for garnish
  • tortillas - 4 small, warmed

Steps

  1. Preheat your grill or stovetop grill pan over medium heat.
  2. In a mixing bowl, combine the olive oil, lime juice, garlic powder, smoked paprika, cumin, salt, and black pepper to create a marinade.
  3. Add the drained jackfruit to the marinade and toss well to coat. Let it marinate for at least 10 minutes.
  4. While the jackfruit is marinating, prepare the avocado salsa by mixing the diced avocado, red onion, tomato, jalapeño (if using), and chopped cilantro in a bowl. Squeeze some lime juice over it and mix gently.
  5. Once the grill is hot, place the marinated jackfruit on it and grill for about 4-5 minutes on each side, or until it is slightly charred and heated through.
  6. Remove the jackfruit from the grill and pull it apart with forks to create a shredded texture.
  7. Serve the grilled jackfruit in warmed tortillas topped with the avocado salsa, and garnish with lime wedges.
