Ingredients

  • White fish fillets (such as tilapia or snapper) - 400 grams
  • Olive oil - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh cilantro - 2 tablespoons, chopped
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Red onion - 1 small, sliced
  • Bell pepper (any color) - 1, sliced
  • Corn tortillas - 4

Steps

  1. In a mixing bowl, combine the olive oil, lime juice, minced garlic, chopped cilantro, cumin, paprika, salt, and black pepper to create a marinade.
  2. Add the white fish fillets to the marinade, ensuring they are well-coated, and let them marinate for at least 15 minutes.
  3. Preheat the grill to medium-high heat.
  4. While the grill is heating, prepare the vegetables by tossing the sliced red onion and bell pepper with a little olive oil, salt, and pepper.
  5. Once the grill is hot, place the marinated fish fillets onto the grill and cook for about 4-5 minutes on each side, or until the fish is opaque and flakes easily with a fork.
  6. During the last few minutes of cooking, add the seasoned vegetables to the grill and cook until they are slightly charred and tender.
  7. Warm the corn tortillas on the grill for about 30 seconds on each side.
  8. To serve, place the grilled fish on the warm tortillas, top with the grilled vegetables, and garnish with extra cilantro if desired.
