Ingredients

  • Pork shoulder - 500 grams
  • Garlic - 4 cloves, minced
  • Fresh orange juice - 60 ml
  • Fresh lime juice - 30 ml
  • Cumin - 1 teaspoon
  • Oregano - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Olive oil - 1 tablespoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Red onion - 1 small, sliced
  • Corn tortillas - 4

Steps

  1. In a bowl, combine minced garlic, orange juice, lime juice, cumin, oregano, chili powder, salt, black pepper, and olive oil to create a marinade.
  2. Cut small slits into the pork shoulder and rub the marinade all over the meat, ensuring it penetrates well. Let it marinate in the refrigerator for at least 2 hours, preferably overnight.
  3. Preheat your grill or oven to 150°C (300°F).
  4. Place the marinated pork shoulder on the grill or in a roasting pan and cover it with foil to retain moisture. Cook for about 2.5 to 3 hours, or until the meat is tender and easily shreds with a fork.
  5. Once cooked, remove the pork from the grill/oven and let it rest for 10 minutes before slicing or shredding.
  6. Serve the pernil with warm corn tortillas, topped with chopped cilantro and sliced red onion.
