- Pork shoulder - 500 grams
- Garlic - 4 cloves, minced
- Fresh orange juice - 60 ml
- Fresh lime juice - 30 ml
- Cumin - 1 teaspoon
- Oregano - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - ½ teaspoon
- Olive oil - 1 tablespoon
- Fresh cilantro - 2 tablespoons, chopped
- Red onion - 1 small, sliced
- Corn tortillas - 4
Steps
- In a bowl, combine minced garlic, orange juice, lime juice, cumin, oregano, chili powder, salt, black pepper, and olive oil to create a marinade.
- Cut small slits into the pork shoulder and rub the marinade all over the meat, ensuring it penetrates well. Let it marinate in the refrigerator for at least 2 hours, preferably overnight.
- Preheat your grill or oven to 150°C (300°F).
- Place the marinated pork shoulder on the grill or in a roasting pan and cover it with foil to retain moisture. Cook for about 2.5 to 3 hours, or until the meat is tender and easily shreds with a fork.
- Once cooked, remove the pork from the grill/oven and let it rest for 10 minutes before slicing or shredding.
- Serve the pernil with warm corn tortillas, topped with chopped cilantro and sliced red onion.
