Ingredients

  • Pork shoulder - 500 grams
  • Garlic - 4 cloves, minced
  • Fresh oregano - 1 tablespoon, chopped
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Lime juice - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat the oven to 160°C (320°F).
  2. In a bowl, mix the minced garlic, oregano, cumin, paprika, lime juice, olive oil, salt, and black pepper to create a marinade.
  3. Rub the marinade evenly over the pork shoulder, ensuring it is well coated. Cover and let marinate in the refrigerator for at least 1 hour, or overnight for best results.
  4. Place the marinated pork shoulder in a roasting pan and cover it with aluminum foil.
  5. Roast in the preheated oven for about 2 hours. Remove the foil during the last 30 minutes to allow the skin to crisp up.
  6. Once cooked, let the pork rest for 10-15 minutes before slicing.
  7. Garnish with fresh cilantro before serving.
