- Pork shoulder - 500 grams
- Garlic - 4 cloves, minced
- Fresh oregano - 1 tablespoon, chopped
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Lime juice - 2 tablespoons
- Olive oil - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh cilantro - 2 tablespoons, chopped (for garnish)
Steps
- Preheat the oven to 160°C (320°F).
- In a bowl, mix the minced garlic, oregano, cumin, paprika, lime juice, olive oil, salt, and black pepper to create a marinade.
- Rub the marinade evenly over the pork shoulder, ensuring it is well coated. Cover and let marinate in the refrigerator for at least 1 hour, or overnight for best results.
- Place the marinated pork shoulder in a roasting pan and cover it with aluminum foil.
- Roast in the preheated oven for about 2 hours. Remove the foil during the last 30 minutes to allow the skin to crisp up.
- Once cooked, let the pork rest for 10-15 minutes before slicing.
- Garnish with fresh cilantro before serving.
