Ingredients

  • Chicken breast - 300 grams
  • Tomatillos - 200 grams
  • Fresh cilantro - 30 grams
  • Jalapeño - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Onion - 1 small, chopped
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lime - 1, juiced

Steps

  1. Preheat a skillet over medium heat and add olive oil.
  2. Season the chicken breast with salt and pepper, then add to the skillet. Cook for about 5-7 minutes on each side until fully cooked and golden brown.
  3. While the chicken is cooking, prepare the salsa verde: In a saucepan, add tomatillos and enough water to cover them. Bring to a boil and cook for 5-7 minutes until softened.
  4. Drain the tomatillos and transfer them to a blender. Add cilantro, jalapeño, garlic, onion, and lime juice. Blend until smooth.
  5. Once the chicken is cooked, remove it from the skillet and let it rest for a few minutes, then slice it.
  6. Pour the salsa verde into the same skillet over medium heat and let it simmer for 5 minutes to meld the flavors.
  7. Serve the sliced chicken topped with the warm salsa verde.
