- Tomatillos - 200 grams
- Fresh cilantro - 30 grams
- Jalapeño - 1 medium, chopped
- Garlic - 2 cloves, minced
- Onion - 1 small, chopped
- Olive oil - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lime - 1, juiced
Steps
- Preheat a skillet over medium heat and add olive oil.
- Season the chicken breast with salt and pepper, then add to the skillet. Cook for about 5-7 minutes on each side until fully cooked and golden brown.
- While the chicken is cooking, prepare the salsa verde: In a saucepan, add tomatillos and enough water to cover them. Bring to a boil and cook for 5-7 minutes until softened.
- Drain the tomatillos and transfer them to a blender. Add cilantro, jalapeño, garlic, onion, and lime juice. Blend until smooth.
- Once the chicken is cooked, remove it from the skillet and let it rest for a few minutes, then slice it.
- Pour the salsa verde into the same skillet over medium heat and let it simmer for 5 minutes to meld the flavors.
- Serve the sliced chicken topped with the warm salsa verde.
