Ingredients

  • All-purpose flour - 50 grams
  • Granulated sugar - 50 grams
  • Baking powder - 1 teaspoon
  • Salt - a pinch
  • Eggs - 2 large
  • Vanilla extract - 1 teaspoon
  • Whole milk - 100 ml
  • Condensed milk - 50 ml
  • Evaporated milk - 50 ml
  • Heavy cream - 50 ml
  • Powdered sugar - 10 grams (for topping)
  • Cinnamon powder - a pinch (for garnish)

Steps

  1. Preheat the oven to 180°C (350°F). Grease and flour a small cake pan.
  2. In a mixing bowl, combine the flour, baking powder, and salt. Set aside.
  3. In another bowl, whisk the eggs and granulated sugar until pale and fluffy, about 5 minutes.
  4. Add the vanilla extract and mix well.
  5. Gradually add the dry ingredients to the egg mixture, alternating with the whole milk. Mix until just combined.
  6. Pour the batter into the prepared cake pan and bake for 25-30 minutes or until a toothpick comes out clean.
  7. While the cake is baking, prepare the tres leches mixture by combining the condensed milk, evaporated milk, and heavy cream in a bowl.
  8. Once the cake is baked, let it cool for 10 minutes, then poke holes all over the top using a fork.
  9. Slowly pour the tres leches mixture over the warm cake, allowing it to soak in.
  10. Refrigerate the cake for at least 2 hours or overnight for best results.
  11. Before serving, whip the heavy cream with powdered sugar until soft peaks form and spread it over the top of the cake. Sprinkle with cinnamon powder for garnish.
