Ingredients

  • Garlic - 2 cloves, minced
  • Lime juice - 2 tablespoons
  • Cilantro - 30 grams, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Crumbled queso fresco - 50 grams (optional)
  • Avocado - 1 medium, sliced

Steps

  1. Cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
  4. Stir in the cooked chickpeas, lime juice, salt, and black pepper. Cook for an additional 3-4 minutes, mixing well.
  5. Combine the cooked pasta with the spinach and chickpea mixture, tossing to ensure everything is well coated.
  6. Remove from heat and stir in chopped cilantro.
