- Garlic - 2 cloves, minced

- Cilantro - 30 grams, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Crumbled queso fresco - 50 grams (optional)
- Avocado - 1 medium, sliced
Steps
- Cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Add fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
- Stir in the cooked chickpeas, lime juice, salt, and black pepper. Cook for an additional 3-4 minutes, mixing well.
- Combine the cooked pasta with the spinach and chickpea mixture, tossing to ensure everything is well coated.
- Remove from heat and stir in chopped cilantro.
