  • Cumin powder - 1 teaspoon
  • Chili powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced
  • Feta cheese - 50 grams, crumbled (optional)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large mixing bowl, combine diced zucchini, red bell pepper, yellow bell pepper, and sliced red onion.
  3. Drizzle with olive oil, and add minced garlic, cumin, chili powder, salt, and black pepper. Toss until the vegetables are well coated.
  4. Spread the vegetable mixture onto a baking sheet and roast in the preheated oven for 20 minutes, or until the vegetables are tender and slightly caramelized.
