- Cumin powder - 1 teaspoon
- Chili powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
- Feta cheese - 50 grams, crumbled (optional)
Steps
- Preheat the oven to 200°C (400°F).
- In a large mixing bowl, combine diced zucchini, red bell pepper, yellow bell pepper, and sliced red onion.
- Drizzle with olive oil, and add minced garlic, cumin, chili powder, salt, and black pepper. Toss until the vegetables are well coated.
- Spread the vegetable mixture onto a baking sheet and roast in the preheated oven for 20 minutes, or until the vegetables are tender and slightly caramelized.
