- Whole wheat spaghetti - 200 grams

- Red bell pepper - 1, diced
- Zucchini - 1 medium, diced
- Carrot - 1 medium, sliced
- Cherry tomatoes - 200 grams, halved
- Spinach - 100 grams
- Cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
- Salt - to taste
- Black pepper - to taste
- Feta cheese - 50 grams, crumbled (optional)
Steps
- Bring a large pot of salted water to a boil. Add the whole wheat spaghetti and cook according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the diced red bell pepper, zucchini, and sliced carrot to the skillet. Cook for 5-7 minutes, stirring occasionally, until the vegetables are tender.
- Stir in the halved cherry tomatoes and cook for an additional 2-3 minutes until they begin to soften.
- Add the cooked spaghetti and spinach to the skillet. Toss everything together until the spinach wilts.
- Season with lime juice, salt, and black pepper. If using, sprinkle crumbled feta cheese on top before serving.
- Serve warm, garnished with chopped cilantro.
