Ingredients

  • Whole wheat spaghetti - 200 grams

  • Red bell pepper - 1, diced
  • Zucchini - 1 medium, diced
  • Carrot - 1 medium, sliced
  • Cherry tomatoes - 200 grams, halved
  • Spinach - 100 grams
  • Cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced
  • Salt - to taste
  • Black pepper - to taste
  • Feta cheese - 50 grams, crumbled (optional)

Steps

  1. Bring a large pot of salted water to a boil. Add the whole wheat spaghetti and cook according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the diced red bell pepper, zucchini, and sliced carrot to the skillet. Cook for 5-7 minutes, stirring occasionally, until the vegetables are tender.
  4. Stir in the halved cherry tomatoes and cook for an additional 2-3 minutes until they begin to soften.
  5. Add the cooked spaghetti and spinach to the skillet. Toss everything together until the spinach wilts.
  6. Season with lime juice, salt, and black pepper. If using, sprinkle crumbled feta cheese on top before serving.
  7. Serve warm, garnished with chopped cilantro.
