Ingredients

  • Pasta (fettuccine or penne) - 200 grams
  • Poblano peppers - 2 medium
  • Onion - 1 small, thinly sliced
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Heavy cream - 120 ml
  • Cotija cheese - 50 grams, crumbled
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Roast the poblano peppers over an open flame or under a broiler until the skin is charred and blistered. Place them in a bowl, cover with plastic wrap, and let them steam for about 10 minutes. Once cooled, peel off the skin, remove the seeds, and slice into strips.
  2. Cook the pasta according to package instructions in salted boiling water until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
  3. In a large skillet, heat the olive oil over medium heat. Add the sliced onion and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the roasted poblano strips to the skillet and sauté for 2-3 minutes. Pour in the heavy cream and stir to combine, allowing it to simmer for 2-3 minutes until slightly thickened.
  5. Add the cooked pasta to the skillet, tossing to coat in the creamy sauce. If the sauce is too thick, add some reserved pasta water to reach desired consistency.
  6. Season with salt and black pepper to taste. Stir in the crumbled Cotija cheese until melted and well combined.
  7. Serve hot, garnished with fresh cilantro.
