- Pasta (fettuccine or penne) - 200 grams
- Poblano peppers - 2 medium

- Heavy cream - 120 ml
- Cotija cheese - 50 grams, crumbled
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- Roast the poblano peppers over an open flame or under a broiler until the skin is charred and blistered. Place them in a bowl, cover with plastic wrap, and let them steam for about 10 minutes. Once cooled, peel off the skin, remove the seeds, and slice into strips.
- Cook the pasta according to package instructions in salted boiling water until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
- In a large skillet, heat the olive oil over medium heat. Add the sliced onion and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the roasted poblano strips to the skillet and sauté for 2-3 minutes. Pour in the heavy cream and stir to combine, allowing it to simmer for 2-3 minutes until slightly thickened.
- Add the cooked pasta to the skillet, tossing to coat in the creamy sauce. If the sauce is too thick, add some reserved pasta water to reach desired consistency.
- Season with salt and black pepper to taste. Stir in the crumbled Cotija cheese until melted and well combined.
- Serve hot, garnished with fresh cilantro.
