Ingredients

  • Zucchini - 2 medium, spiralized
  • Chicken breast - 300 grams, diced
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1, diced
  • Onion - 1 small, diced
  • Tomato - 1 large, diced
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Oregano - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Heat olive oil in a large pan over medium heat.
  2. Add the diced onion and red bell pepper, sautéing until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the diced chicken breast to the pan, seasoning with cumin, chili powder, oregano, salt, and black pepper. Cook until the chicken is browned and cooked through, about 7-10 minutes.
  5. Add the diced tomato to the pan, stirring well to combine. Let it cook for 5 minutes, allowing the tomatoes to release their juices.
  6. Meanwhile, in a separate pot, lightly sauté the spiralized zucchini noodles for 2-3 minutes until just tender.
  7. Serve the chicken mixture over the zucchini noodles and garnish with fresh cilantro.
