Ingredients
- Chicken breast - 250 grams
- Zucchini - 2 medium-sized
- Avocado - 1 ripe
- Lime - 1
- Garlic - 2 cloves
- Cilantro - 20 grams
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Pepper - 1/2 teaspoon
- Chili powder - 1/2 teaspoon
- Cumin - 1/2 teaspoon
Steps
- Spiralize the zucchini using a spiralizer or peeler to create 'noodles'. Set aside.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Season the chicken breast with salt, pepper, chili powder, and cumin.
- Cook the chicken breast in the skillet for about 6-7 minutes on each side, or until fully cooked. Remove from heat and let it rest.
- In a food processor, combine the avocado, garlic, lime juice, and cilantro. Blend until smooth. Adjust seasoning with salt if needed.
- In the same skillet, add another tablespoon of olive oil and toss in the zucchini noodles. Sauté for 2-3 minutes until slightly tender but still crisp.
