Ingredients

  • Chicken breast - 250 grams
  • Zucchini - 2 medium-sized
  • Avocado - 1 ripe
  • Lime - 1
  • Garlic - 2 cloves
  • Cilantro - 20 grams
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Pepper - 1/2 teaspoon
  • Chili powder - 1/2 teaspoon
  • Cumin - 1/2 teaspoon

Steps

  1. Spiralize the zucchini using a spiralizer or peeler to create 'noodles'. Set aside.
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Season the chicken breast with salt, pepper, chili powder, and cumin.
  3. Cook the chicken breast in the skillet for about 6-7 minutes on each side, or until fully cooked. Remove from heat and let it rest.
  4. In a food processor, combine the avocado, garlic, lime juice, and cilantro. Blend until smooth. Adjust seasoning with salt if needed.
  5. In the same skillet, add another tablespoon of olive oil and toss in the zucchini noodles. Sauté for 2-3 minutes until slightly tender but still crisp.
