Ingredients
- Pasta (penne or fusilli) - 200 grams
- Poblano peppers - 2 medium

- Garlic - 3 cloves, minced
- Red onion - 1 small, diced
- Canned diced tomatoes - 400 grams
- Cumin - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
- Lime - 1, juiced
- Avocado - 1, sliced (optional)
Steps
- Preheat the oven to 200°C (400°F).
- Place the poblano peppers on a baking sheet and roast in the oven for about 15-20 minutes, or until the skin is blistered and charred. Remove from the oven, place in a bowl, cover with plastic wrap, and let them steam for about 10 minutes.
- Meanwhile, bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
- Once the peppers have cooled, peel off the skin, remove the seeds, and slice them into strips.
- In a large skillet, heat olive oil over medium heat. Add the minced garlic and diced red onion, sautéing until the onion is translucent, about 3-4 minutes.
- Add the canned diced tomatoes, cumin, smoked paprika, salt, and black pepper to the skillet. Stir well and let it simmer for about 5 minutes.
- Add the cooked pasta and roasted poblano strips to the skillet, mixing well to combine everything.
- Drizzle with lime juice and garnish with fresh cilantro before serving. Optionally, add sliced avocado on top.
