Ingredients

  • Pasta (penne or fusilli) - 200 grams
  • Poblano peppers - 2 medium
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Red onion - 1 small, diced
  • Canned diced tomatoes - 400 grams
  • Cumin - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish
  • Lime - 1, juiced
  • Avocado - 1, sliced (optional)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Place the poblano peppers on a baking sheet and roast in the oven for about 15-20 minutes, or until the skin is blistered and charred. Remove from the oven, place in a bowl, cover with plastic wrap, and let them steam for about 10 minutes.
  3. Meanwhile, bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  4. Once the peppers have cooled, peel off the skin, remove the seeds, and slice them into strips.
  5. In a large skillet, heat olive oil over medium heat. Add the minced garlic and diced red onion, sautéing until the onion is translucent, about 3-4 minutes.
  6. Add the canned diced tomatoes, cumin, smoked paprika, salt, and black pepper to the skillet. Stir well and let it simmer for about 5 minutes.
  7. Add the cooked pasta and roasted poblano strips to the skillet, mixing well to combine everything.
  8. Drizzle with lime juice and garnish with fresh cilantro before serving. Optionally, add sliced avocado on top.
