  • Cherry tomatoes - 200 grams, halved
  • Red bell pepper - 1 medium, diced
  • Lime juice - 1 tablespoon
  • Cilantro - 2 tablespoons, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Avocado - 1/2, sliced (for garnish)

Steps

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add the diced red bell pepper and cook for 3-4 minutes until softened.
  4. Add the white fish pieces to the skillet, season with salt and pepper, and cook until the fish is opaque and flakes easily, about 5-7 minutes.
  5. Stir in the halved cherry tomatoes and lime juice, cooking for another 2-3 minutes until the tomatoes start to soften.
  6. In a separate pot, lightly sauté the spiralized zucchini noodles for 2-3 minutes until just tender.
  7. Combine the zucchini noodles with the fish and sauce mixture in the skillet, tossing gently to combine.
