Ingredients

  • Nopales - 200 grams, diced
  • Pasta (whole wheat or gluten-free) - 100 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Cherry tomatoes - 100 grams, halved
  • Cilantro - 2 tablespoons, chopped
  • Lime juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent.
  3. Add the diced nopales to the skillet and cook for about 5-7 minutes, stirring occasionally, until they are tender and any excess moisture has evaporated.
  4. Stir in the cherry tomatoes and cook for an additional 3 minutes until they soften.
  5. Combine the cooked pasta with the nopales mixture, adding lime juice, salt, and black pepper to taste.
  6. Remove from heat and stir in the chopped cilantro before serving.
