- Nopales - 200 grams, diced

- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, diced
- Cherry tomatoes - 100 grams, halved
- Cilantro - 2 tablespoons, chopped
- Lime juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
- In a skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent.
- Add the diced nopales to the skillet and cook for about 5-7 minutes, stirring occasionally, until they are tender and any excess moisture has evaporated.
- Stir in the cherry tomatoes and cook for an additional 3 minutes until they soften.
- Combine the cooked pasta with the nopales mixture, adding lime juice, salt, and black pepper to taste.
