  • Cumin powder - 1 teaspoon
  • Chili powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons (chopped)
  • Lime - 1 (juiced)
  • Queso fresco - 30 grams (crumbled, optional for serving)

Steps

  1. Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until it becomes translucent, about 3-4 minutes.
  3. Add the minced garlic to the skillet and sauté for an additional 1 minute, stirring frequently to avoid burning.
  4. Stir in the cooked black beans, cumin, chili powder, salt, and black pepper. Cook for 5-7 minutes, allowing the flavors to meld.
  5. Add the cooked pasta to the skillet, mixing well to combine all the ingredients. Cook for another 2-3 minutes until heated through.
  6. Remove from heat, and stir in the fresh cilantro and lime juice just before serving.
  7. Serve warm, optionally topped with crumbled queso fresco.
