  • Fresh spinach - 150 grams, washed and chopped
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Tomato - 2 medium, diced
  • Cilantro - 2 tablespoons, chopped
  • Lime juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cumin - 1/2 teaspoon
  • Water - 500 ml

Steps

  1. In a large pot, bring salted water to a boil and cook the gluten-free pasta according to package instructions, usually around 8-10 minutes. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, cooking until soft and fragrant, about 3-4 minutes.
  3. Add the pork espinazo pieces to the skillet and cook until browned on all sides, about 5-7 minutes.
  4. Stir in the diced tomatoes, cumin, salt, and black pepper. Pour in the water and let it simmer for 15-20 minutes until the pork is tender and the sauce thickens slightly.
  5. Add the chopped spinach and cook for another 2-3 minutes until wilted.
  6. Mix the cooked pasta into the skillet, ensuring it is well coated with the sauce. Add lime juice and cilantro, stirring to combine.
