Ingredients

  • Zucchini - 2 medium
  • Chorizo sausage (preferably grass-fed) - 200 grams
  • Red bell pepper - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Cilantro - 2 tablespoons, chopped
  • Lime juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Spiralize the zucchini using a spiralizer or julienne peeler to create zucchini noodles and set aside.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the minced garlic and diced red bell pepper to the skillet and sauté for about 3-4 minutes until softened.
  4. Push the vegetables to one side of the skillet and add the chorizo sausage, breaking it apart with a spatula. Cook for 5-7 minutes until browned and cooked through.
  5. Add the spiralized zucchini to the skillet, mixing it with the chorizo and vegetables. Cook for an additional 3-5 minutes until the zucchini is tender but still al dente.
  6. Remove from heat, and stir in the lime juice, chopped cilantro, salt, and black pepper to taste.
  7. Serve immediately, garnished with additional cilantro if desired.
