Ingredients

  • Chicharrón (pork cracklings) - 150 grams
  • Zucchini - 1 medium, spiralized
  • Tomato - 2 medium, diced
  • Red onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Heat the olive oil in a skillet over medium heat and add the diced red onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.
  2. Add the diced tomatoes to the skillet and cook for another 5 minutes until they soften.
