  • Cherry tomatoes (halved) - 200 grams
  • Red bell pepper (diced) - 1 medium
  • Onion (diced) - 1 small
  • Cilantro (chopped) - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Chili powder - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Cook the whole grain pasta according to package instructions, then drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and red bell pepper, sautéing for about 3-4 minutes until softened.
  3. Add the minced garlic, stirring for 30 seconds until fragrant.

  6. Mix in the cooked pasta, lime juice, and chopped cilantro, tossing everything together to combine well.
