  • Red onion - 1 small, diced
  • Fresh basil - 10g, chopped
  • Oregano - 1 teaspoon, dried
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese - 30g, grated (optional)

Steps

  1. Spiralize the zucchini using a spiralizer or a vegetable peeler to create noodles. Set aside.
  2. Heat the olive oil in a large skillet over medium heat. Add the diced red onion and sauté for about 3-4 minutes until translucent.
  3. Add the minced garlic and sauté for another minute until fragrant.
  4. Pour in the canned diced tomatoes, dried oregano, salt, and black pepper. Stir and let it simmer for about 10 minutes to develop the flavors.
  5. Add the spiralized zucchini to the skillet and toss gently with the sauce. Cook for an additional 3-5 minutes, just until the zucchini is tender but still has a slight crunch.
