Ingredients
- Zucchini - 2 medium, spiralized
- Canned tuna in olive oil - 1 can (150g), drained
- Cherry tomatoes - 200g, halved
- Red onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
- Salt - to taste
- Black pepper - to taste
- Avocado - 1 small, diced (for garnish)
Steps
- Heat the olive oil in a large skillet over medium heat.
- Add the chopped red onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
- Stir in the halved cherry tomatoes and cook for another 2-3 minutes until they soften.
- Add the drained tuna to the skillet, breaking it up gently with a spoon, and season with salt and pepper. Cook for another 2 minutes until heated through.
- Remove the skillet from heat and add the spiralized zucchini, lime juice, and chopped cilantro. Toss everything together until the zucchini is well coated.
- Serve immediately, garnished with diced avocado on top.
