Ingredients

  • Zucchini - 2 medium, spiralized
  • Canned tuna in olive oil - 1 can (150g), drained
  • Cherry tomatoes - 200g, halved
  • Red onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced
  • Salt - to taste
  • Black pepper - to taste
  • Avocado - 1 small, diced (for garnish)

Steps

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped red onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
  3. Stir in the halved cherry tomatoes and cook for another 2-3 minutes until they soften.
  4. Add the drained tuna to the skillet, breaking it up gently with a spoon, and season with salt and pepper. Cook for another 2 minutes until heated through.
  5. Remove the skillet from heat and add the spiralized zucchini, lime juice, and chopped cilantro. Toss everything together until the zucchini is well coated.
  6. Serve immediately, garnished with diced avocado on top.
