- Ripe avocado - 1 medium
- Garlic - 2 cloves, minced
- Lime juice - 2 tablespoons
- Fresh cilantro - 30 grams, chopped
- Olive oil - 2 tablespoons
- Cherry tomatoes - 100 grams, halved
- Salt - to taste
- Black pepper - to taste
- Crushed red pepper flakes - 1/2 teaspoon (optional)
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
- While the pasta is cooking, prepare the avocado sauce by placing the ripe avocado, minced garlic, lime juice, chopped cilantro, olive oil, salt, and black pepper in a blender or food processor.
- Blend until smooth and creamy. If the mixture is too thick, add a tablespoon of water to reach the desired consistency.
- Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the pasta.
- In a large mixing bowl, combine the drained pasta with the avocado sauce, adding reserved pasta water as needed to coat the pasta evenly.
- Gently fold in the halved cherry tomatoes and crushed red pepper flakes, if using.
