  • Pasta (spaghetti or fettuccine) - 200 grams
  • Ripe avocado - 1 medium
  • Garlic - 2 cloves, minced
  • Lime juice - 2 tablespoons
  • Fresh cilantro - 30 grams, chopped
  • Olive oil - 2 tablespoons
  • Cherry tomatoes - 100 grams, halved
  • Salt - to taste
  • Black pepper - to taste
  • Crushed red pepper flakes - 1/2 teaspoon (optional)

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta is cooking, prepare the avocado sauce by placing the ripe avocado, minced garlic, lime juice, chopped cilantro, olive oil, salt, and black pepper in a blender or food processor.
  3. Blend until smooth and creamy. If the mixture is too thick, add a tablespoon of water to reach the desired consistency.
  4. Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the pasta.
  5. In a large mixing bowl, combine the drained pasta with the avocado sauce, adding reserved pasta water as needed to coat the pasta evenly.
  6. Gently fold in the halved cherry tomatoes and crushed red pepper flakes, if using.
  7. Serve immediately, garnished with additional cilantro and lime wedges.
