Ingredients

  • Pasta (Fusilli or Penne) - 200 grams
  • Zucchini - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Yellow bell pepper - 1 medium, diced
  • Red onion - 1 medium, sliced
  • Olive oil - 3 tablespoons
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced
  • Parmesan cheese (optional) - 30 grams, grated

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large bowl, combine the diced zucchini, red bell pepper, yellow bell pepper, and sliced red onion.
  3. Drizzle the vegetables with 2 tablespoons of olive oil, and season with cumin, smoked paprika, salt, and black pepper. Toss to coat evenly.
  4. Spread the seasoned vegetables on a baking sheet and roast in the preheated oven for 20 minutes, or until tender and slightly charred.
  5. While the vegetables are roasting, bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  6. In a large skillet over medium heat, add the remaining tablespoon of olive oil and sauté the minced garlic for about 1 minute, until fragrant.
  7. Add the cooked pasta to the skillet with the sautéed garlic, then stir in the roasted vegetables and lime juice. Toss everything together until well combined.
  8. Remove from heat, garnish with chopped cilantro and grated Parmesan cheese if using, then serve immediately.
