Ingredients
- Pasta (Fusilli or Penne) - 200 grams
- Zucchini - 1 medium, diced
- Red bell pepper - 1 medium, diced
- Yellow bell pepper - 1 medium, diced
- Red onion - 1 medium, sliced
- Olive oil - 3 tablespoons
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
- Parmesan cheese (optional) - 30 grams, grated
Steps
- Preheat the oven to 200°C (400°F).
- In a large bowl, combine the diced zucchini, red bell pepper, yellow bell pepper, and sliced red onion.
- Drizzle the vegetables with 2 tablespoons of olive oil, and season with cumin, smoked paprika, salt, and black pepper. Toss to coat evenly.
- Spread the seasoned vegetables on a baking sheet and roast in the preheated oven for 20 minutes, or until tender and slightly charred.
- While the vegetables are roasting, bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet over medium heat, add the remaining tablespoon of olive oil and sauté the minced garlic for about 1 minute, until fragrant.
- Add the cooked pasta to the skillet with the sautéed garlic, then stir in the roasted vegetables and lime juice. Toss everything together until well combined.
- Remove from heat, garnish with chopped cilantro and grated Parmesan cheese if using, then serve immediately.
