  • Zucchini - 1, diced

  • Black beans - 100 grams, rinsed and drained
  • Cherry tomatoes - 150 grams, halved
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime juice - 1 tablespoon
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a pot of salted water to a boil and cook the gluten-free pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat and add minced garlic. Sauté for about 1 minute until fragrant.
  3. Add diced red bell pepper and zucchini to the skillet, cooking for 5-7 minutes until they are tender.
