- Black beans - 100 grams, rinsed and drained
- Cherry tomatoes - 150 grams, halved
- Fresh cilantro - 2 tablespoons, chopped
- Lime juice - 1 tablespoon
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a pot of salted water to a boil and cook the gluten-free pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat and add minced garlic. Sauté for about 1 minute until fragrant.
- Add diced red bell pepper and zucchini to the skillet, cooking for 5-7 minutes until they are tender.
- Stir in the corn kernels, black beans, and halved cherry tomatoes. Cook for an additional 3-4 minutes until heated through.
