Ingredients

  • Whole wheat pasta - 150 grams
  • Fresh cilantro - 30 grams
  • Fresh parsley - 30 grams
  • Garlic - 2 cloves
  • Lime juice - 2 tablespoons
  • Olive oil - 3 tablespoons
  • Green chili (jalapeño or serrano) - 1, seeds removed and chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cherry tomatoes - 100 grams, halved
  • Avocado - 1 small, diced

Steps

  1. Cook the whole wheat pasta in a large pot of salted boiling water according to package instructions until al dente, about 8-10 minutes.
  2. While the pasta is cooking, prepare the salsa verde by combining cilantro, parsley, garlic, lime juice, olive oil, green chili, salt, and black pepper in a blender or food processor. Blend until smooth.
  3. Once the pasta is done, drain it and return it to the pot. Pour the salsa verde over the hot pasta and stir to combine thoroughly.
  4. Add the halved cherry tomatoes and diced avocado to the pasta, gently mixing them in to avoid mashing the avocado.
  5. Serve immediately, garnished with extra cilantro if desired.
