- Whole wheat pasta - 150 grams
- Fresh cilantro - 30 grams
- Fresh parsley - 30 grams
- Garlic - 2 cloves
- Lime juice - 2 tablespoons
- Olive oil - 3 tablespoons
- Green chili (jalapeño or serrano) - 1, seeds removed and chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cherry tomatoes - 100 grams, halved
- Avocado - 1 small, diced
Steps
- Cook the whole wheat pasta in a large pot of salted boiling water according to package instructions until al dente, about 8-10 minutes.
- While the pasta is cooking, prepare the salsa verde by combining cilantro, parsley, garlic, lime juice, olive oil, green chili, salt, and black pepper in a blender or food processor. Blend until smooth.
- Once the pasta is done, drain it and return it to the pot. Pour the salsa verde over the hot pasta and stir to combine thoroughly.
- Add the halved cherry tomatoes and diced avocado to the pasta, gently mixing them in to avoid mashing the avocado.
- Serve immediately, garnished with extra cilantro if desired.
