  • Fresh tomatoes - 400 grams, chopped
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Olive oil - 2 tablespoons
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime juice - 1 tablespoon
  • Cumin powder - 1 teaspoon
  • Chili powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Avocado - 1 small, sliced for garnish
  • Feta cheese - 30 grams, crumbled (optional)

Steps

  1. In a pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.

  4. Stir in the chopped tomatoes, cumin, chili powder, salt, and pepper. Cook for about 10 minutes, stirring occasionally, until the tomatoes break down and the sauce thickens.

  6. Combine the cooked pasta with the sauce in the skillet, tossing to coat evenly.
  7. Serve hot, garnished with sliced avocado and crumbled feta cheese if desired.
