Ingredients

  • Pasta (spaghetti or penne) - 150 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Onion - 1 small, diced
  • Tomatoes (fresh or canned) - 400 grams, chopped
  • Chipotle pepper in adobo sauce - 1, minced
  • Cumin - 1 teaspoon
  • Oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)
  • Lime - 1, cut into wedges (for serving)

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
  3. Add the chopped tomatoes and cook for another 5-7 minutes until they soften and release their juices.
  4. Stir in the minced chipotle pepper, cumin, oregano, salt, and black pepper. Simmer the sauce for about 10 minutes, allowing the flavors to meld together.
  5. Once the sauce has thickened, add the cooked pasta to the skillet and toss gently to coat the pasta evenly with the sauce.
  6. Serve hot, garnished with fresh cilantro and lime wedges on the side.
