Ingredients

  • Pasta (spaghetti or fettuccine) - 200 grams
  • Tamarind paste - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Red bell pepper - 1, diced
  • Vegetable broth - 200 milliliters
  • Brown sugar - 1 tablespoon
  • Cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced
  • Salt - to taste
  • Black pepper - to taste
  • Grated cheese (optional) - for serving

Steps

  1. Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside, reserving a cup of pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and diced red bell pepper to the skillet, cooking for an additional 2-3 minutes until the peppers soften.
  4. Stir in the tamarind paste, vegetable broth, and brown sugar. Bring the mixture to a simmer, allowing it to cook for about 5 minutes until slightly thickened.
  5. Add the cooked pasta to the skillet, tossing to coat with the sauce. If the mixture seems dry, add reserved pasta water a little at a time until desired consistency is reached.
  6. Remove from heat, add lime juice, chopped cilantro, and season with salt and black pepper to taste. Toss well to combine.
  7. Serve immediately, garnished with grated cheese if desired.
