- Pasta (spaghetti or linguine) - 150 grams
- Fresh cilantro - 50 grams
- Garlic - 2 cloves
- Lime juice - 2 tablespoons
- Olive oil - 3 tablespoons
- Jalapeño (seeded and finely chopped) - 1 small
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Parmesan cheese (optional) - 30 grams
- Cherry tomatoes (halved) - 100 grams
Steps
- Boil a pot of salted water and cook the pasta according to package instructions until al dente.
- While the pasta is cooking, prepare the cilantro sauce by blending the fresh cilantro, garlic, lime juice, olive oil, jalapeño, salt, and black pepper in a food processor until smooth.
- Once the pasta is cooked, reserve 1/2 cup of pasta water and then drain the pasta.
- In a large mixing bowl, combine the drained pasta with the cilantro sauce, adding reserved pasta water a little at a time until the desired consistency is reached.
- Fold in the halved cherry tomatoes and toss gently to combine.
- Serve immediately, garnished with grated Parmesan cheese if desired.
