Ingredients

  • Pasta (spaghetti or linguine) - 150 grams
  • Fresh cilantro - 50 grams
  • Garlic - 2 cloves
  • Lime juice - 2 tablespoons
  • Olive oil - 3 tablespoons
  • Jalapeño (seeded and finely chopped) - 1 small
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Parmesan cheese (optional) - 30 grams
  • Cherry tomatoes (halved) - 100 grams

Steps

  1. Boil a pot of salted water and cook the pasta according to package instructions until al dente.
  2. While the pasta is cooking, prepare the cilantro sauce by blending the fresh cilantro, garlic, lime juice, olive oil, jalapeño, salt, and black pepper in a food processor until smooth.
  3. Once the pasta is cooked, reserve 1/2 cup of pasta water and then drain the pasta.
  4. In a large mixing bowl, combine the drained pasta with the cilantro sauce, adding reserved pasta water a little at a time until the desired consistency is reached.
  5. Fold in the halved cherry tomatoes and toss gently to combine.
  6. Serve immediately, garnished with grated Parmesan cheese if desired.
