Ingredients

  • Pasta (whole wheat or chickpea) - 150 grams
  • Avocado - 1 ripe (approximately 200 grams)
  • Greek yogurt - 100 grams
  • Lime juice - 2 tablespoons
  • Cilantro - 2 tablespoons, chopped
  • Garlic - 1 clove, minced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cherry tomatoes - 100 grams, halved
  • Pine nuts - 30 grams, toasted

Steps

  1. Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta is cooking, prepare the avocado sauce by placing the avocado, Greek yogurt, lime juice, cilantro, minced garlic, salt, and black pepper in a blender or food processor.
  3. Blend the ingredients until smooth and creamy. If the sauce is too thick, add a tablespoon of water to reach desired consistency.
  4. Once the pasta is cooked, drain and return it to the pot. Pour the avocado sauce over the hot pasta and toss to combine thoroughly.
  5. Add the halved cherry tomatoes and gently mix them in, allowing them to warm slightly with the pasta.
  6. Serve the pasta in bowls, topped with toasted pine nuts and extra cilantro if desired.
