- Avocado - 1 ripe (approximately 200 grams)
- Greek yogurt - 100 grams
- Lime juice - 2 tablespoons
- Cilantro - 2 tablespoons, chopped
- Garlic - 1 clove, minced
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cherry tomatoes - 100 grams, halved
- Pine nuts - 30 grams, toasted
Steps
- Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente.
- While the pasta is cooking, prepare the avocado sauce by placing the avocado, Greek yogurt, lime juice, cilantro, minced garlic, salt, and black pepper in a blender or food processor.
- Blend the ingredients until smooth and creamy. If the sauce is too thick, add a tablespoon of water to reach desired consistency.
- Once the pasta is cooked, drain and return it to the pot. Pour the avocado sauce over the hot pasta and toss to combine thoroughly.
- Add the halved cherry tomatoes and gently mix them in, allowing them to warm slightly with the pasta.
- Serve the pasta in bowls, topped with toasted pine nuts and extra cilantro if desired.
