Ingredients

  • Vegetable oil - 2 tablespoons
  • Mexican crema or sour cream - 100 grams
  • Cotija cheese (or feta) - 50 grams, crumbled
  • Salt - to taste
  • Black pepper - to taste
  • Cilantro - for garnish (optional)

Steps

  1. Roast the poblano peppers over an open flame or under a broiler until the skin is charred and blistered. Place them in a plastic bag for 10 minutes to steam, then peel off the skin, remove seeds, and slice into strips.
  2. In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.
  3. In a large skillet, heat the vegetable oil over medium heat. Add the sliced onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the roasted poblano strips to the skillet and stir well to combine. Season with salt and black pepper to taste.
  5. Lower the heat and add the cooked pasta to the skillet, along with the Mexican crema. Toss everything together, adding reserved pasta water a little at a time until the sauce reaches the desired creaminess.
  6. Remove from heat and sprinkle the crumbled Cotija cheese on top. Toss gently to combine.
  7. Serve immediately, garnished with fresh cilantro if desired.
