- Mexican crema or sour cream - 100 grams
- Cotija cheese (or feta) - 50 grams, crumbled
- Salt - to taste
- Black pepper - to taste
- Cilantro - for garnish (optional)
Steps
- Roast the poblano peppers over an open flame or under a broiler until the skin is charred and blistered. Place them in a plastic bag for 10 minutes to steam, then peel off the skin, remove seeds, and slice into strips.
- In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.
- In a large skillet, heat the vegetable oil over medium heat. Add the sliced onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic and cook for another minute until fragrant.
- Add the roasted poblano strips to the skillet and stir well to combine. Season with salt and black pepper to taste.
- Lower the heat and add the cooked pasta to the skillet, along with the Mexican crema. Toss everything together, adding reserved pasta water a little at a time until the sauce reaches the desired creaminess.
- Remove from heat and sprinkle the crumbled Cotija cheese on top. Toss gently to combine.
- Serve immediately, garnished with fresh cilantro if desired.
