Ingredients

  • Pasta (spaghetti or fettuccine) - 200 grams
  • Poblano peppers - 2 medium
  • Onion - 1 medium, thinly sliced
  • Garlic - 2 cloves, minced
  • Cashew nuts (raw) - 100 grams, soaked for 2-4 hours
  • Vegetable broth - 150 ml
  • Nutritional yeast - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Preheat your oven to 220°C (425°F).
  2. Place the poblano peppers on a baking sheet and roast in the oven for about 15-20 minutes, turning occasionally, until the skins are blistered and charred.
  3. Remove the peppers from the oven and place them in a bowl covered with plastic wrap for 10 minutes to steam. This will make peeling easier.
  4. Meanwhile, cook the pasta according to package instructions. Drain and set aside.
  5. Once the peppers are cool enough to handle, peel off the skins, remove the seeds, and slice them into strips.
  6. In a large skillet, heat olive oil over medium heat. Add the sliced onion and sauté for about 5 minutes until translucent.
  7. Add the minced garlic and sauté for another minute, until fragrant.
  8. Add the roasted poblano strips to the skillet and stir to combine. Season with salt and black pepper to taste.
  9. In a blender, combine the soaked cashews, vegetable broth, nutritional yeast, and a pinch of salt. Blend until smooth and creamy.
  10. Pour the cashew sauce into the skillet with the peppers and onions, stirring to combine. Cook for 2-3 minutes until heated through.
  11. Add the cooked pasta to the skillet, tossing to coat evenly with the sauce. Cook for an additional 2 minutes.
  12. Serve hot, garnished with fresh cilantro.
