Ingredients
- Pasta (spaghetti or fettuccine) - 200 grams
- Poblano peppers - 2 medium
- Onion - 1 medium, thinly sliced
- Garlic - 2 cloves, minced
- Cashew nuts (raw) - 100 grams, soaked for 2-4 hours
- Vegetable broth - 150 ml
- Nutritional yeast - 2 tablespoons
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- Preheat your oven to 220°C (425°F).
- Place the poblano peppers on a baking sheet and roast in the oven for about 15-20 minutes, turning occasionally, until the skins are blistered and charred.
- Remove the peppers from the oven and place them in a bowl covered with plastic wrap for 10 minutes to steam. This will make peeling easier.
- Meanwhile, cook the pasta according to package instructions. Drain and set aside.
- Once the peppers are cool enough to handle, peel off the skins, remove the seeds, and slice them into strips.
- In a large skillet, heat olive oil over medium heat. Add the sliced onion and sauté for about 5 minutes until translucent.
- Add the minced garlic and sauté for another minute, until fragrant.
- Add the roasted poblano strips to the skillet and stir to combine. Season with salt and black pepper to taste.
- In a blender, combine the soaked cashews, vegetable broth, nutritional yeast, and a pinch of salt. Blend until smooth and creamy.
- Pour the cashew sauce into the skillet with the peppers and onions, stirring to combine. Cook for 2-3 minutes until heated through.
- Add the cooked pasta to the skillet, tossing to coat evenly with the sauce. Cook for an additional 2 minutes.
- Serve hot, garnished with fresh cilantro.
