- Garlic - 2 cloves, minced
- Cherry tomatoes - 200 grams, halved
- Bell pepper (any color) - 1 medium, diced
- Spinach - 100 grams, fresh
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the diced bell pepper and halved cherry tomatoes to the skillet. Cook for 5-7 minutes until the vegetables are softened.
