  • Zucchini, diced - 1 medium

  • Onion, chopped - 1 small
  • Diced tomatoes (canned) - 200 grams
  • Black beans, drained and rinsed - 100 grams
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro, chopped - for garnish
  • Lime wedges - for serving

Steps

  1. Cook the whole wheat pasta according to package instructions until al dente, then drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sauté for 2-3 minutes until fragrant.
