- Garlic, minced - 2 cloves
- Red bell pepper, diced - 1 medium (about 150 grams)
- Zucchini, diced - 1 medium (about 150 grams)
- Canned black beans, drained and rinsed - 200 grams
- Vegetable broth - 250 ml
- Mole paste - 100 grams
- Cilantro, chopped - 2 tablespoons
- Lime, juiced - 1
- Salt - to taste
- Black pepper - to taste
- Grated cheese (optional, for serving) - 50 grams
Steps
- Cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté for about 3-4 minutes until the onion is translucent.
- Add the diced red bell pepper and zucchini to the skillet, cooking for an additional 5-6 minutes until the vegetables are tender.
- Stir in the black beans, vegetable broth, and mole paste. Mix well and allow the sauce to simmer for about 5 minutes, stirring occasionally, until heated through.
- Add the cooked pasta to the skillet, tossing to coat the pasta evenly with the mole sauce. Season with salt and black pepper to taste.
- Remove from heat, and stir in the chopped cilantro and lime juice.
- Serve hot, garnished with grated cheese if desired.
