- Fresh jitomates (tomatoes) - 300 grams, diced
- Garlic - 3 cloves, minced
- Red onion - 1 small, finely chopped
- Olive oil - 2 tablespoons
- Fresh basil - 1/4 cup, chopped
- Oregano - 1 teaspoon
- Red chili flakes - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Nutritional yeast - 2 tablespoons (optional, for a cheesy flavor)
Steps
- Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
- In a large skillet, heat the olive oil over medium heat. Add the chopped red onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic to the skillet and cook for an additional 1-2 minutes until fragrant.
- Stir in the diced jitomates, oregano, red chili flakes, salt, and black pepper. Cook for about 10 minutes, allowing the tomatoes to break down and form a sauce.
- If the sauce is too thick, add some reserved pasta water to reach the desired consistency.
- Toss the cooked spaghetti into the skillet with the tomato sauce, mixing well to combine. Cook for an additional 2-3 minutes to heat through.
- Remove from heat and stir in the chopped basil and nutritional yeast, if using. Serve immediately and enjoy!
