  • Red onion - 1 small, finely chopped
  • Olive oil - 2 tablespoons
  • Fresh basil - 1/4 cup, chopped
  • Oregano - 1 teaspoon
  • Red chili flakes - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Nutritional yeast - 2 tablespoons (optional, for a cheesy flavor)

Steps

  1. Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped red onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic to the skillet and cook for an additional 1-2 minutes until fragrant.
  4. Stir in the diced jitomates, oregano, red chili flakes, salt, and black pepper. Cook for about 10 minutes, allowing the tomatoes to break down and form a sauce.
  5. If the sauce is too thick, add some reserved pasta water to reach the desired consistency.
  6. Toss the cooked spaghetti into the skillet with the tomato sauce, mixing well to combine. Cook for an additional 2-3 minutes to heat through.
  7. Remove from heat and stir in the chopped basil and nutritional yeast, if using. Serve immediately and enjoy!
