- Fresh cilantro - 1 cup, chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Lime juice - 2 tablespoons
- Cherry tomatoes - 200 grams, halved
- Red onion - 1/2, thinly sliced
- Avocado - 1 medium, diced
- Salt - to taste
- Black pepper - to taste
- Red chili flakes - 1/2 teaspoon (optional)
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
- Add the sliced red onion to the skillet and cook for another 3-4 minutes until softened.
- Stir in the halved cherry tomatoes and cook for an additional 2-3 minutes until they start to blister.
- Once the pasta is cooked, reserve 1/4 cup of pasta water, then drain the pasta and add it to the skillet with the veggies.
- Add the chopped cilantro, lime juice, and reserved pasta water to the skillet. Toss everything together until well combined.
- Season with salt, black pepper, and red chili flakes if desired.
- Serve the pasta topped with diced avocado and additional cilantro if desired.
