Ingredients

  • Pasta (spaghetti or fettuccine) - 150 grams
  • Fresh cilantro - 1 cup, chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Cherry tomatoes - 200 grams, halved
  • Red onion - 1/2, thinly sliced
  • Avocado - 1 medium, diced
  • Salt - to taste
  • Black pepper - to taste
  • Red chili flakes - 1/2 teaspoon (optional)

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  3. Add the sliced red onion to the skillet and cook for another 3-4 minutes until softened.
  4. Stir in the halved cherry tomatoes and cook for an additional 2-3 minutes until they start to blister.
  5. Once the pasta is cooked, reserve 1/4 cup of pasta water, then drain the pasta and add it to the skillet with the veggies.
  6. Add the chopped cilantro, lime juice, and reserved pasta water to the skillet. Toss everything together until well combined.
  7. Season with salt, black pepper, and red chili flakes if desired.
  8. Serve the pasta topped with diced avocado and additional cilantro if desired.
