  • Chorizo sausage - 150 grams, casings removed
  • Olive oil - 1 tablespoon
  • Garlic - 3 cloves, minced
  • Onion - 1 small, diced
  • Red bell pepper - 1, diced
  • Canned diced tomatoes - 400 grams
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish
  • Lime - 1, cut into wedges

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and red bell pepper, cooking until softened, about 3-4 minutes.
  3. Add the minced garlic and chorizo to the skillet, breaking the sausage into smaller pieces with a spatula. Cook until the chorizo is browned and cooked through, about 5-7 minutes.
  4. Stir in the canned diced tomatoes, ground cumin, paprika, salt, and black pepper. Allow to simmer for 5 minutes to blend the flavors.
  5. Add the cooked pasta to the skillet, tossing to combine everything evenly. Cook for an additional 2-3 minutes until the pasta is heated through.
  6. Serve hot, garnished with fresh cilantro and lime wedges on the side.
