- Poblano peppers - 2 large
- Ground beef (Halal) - 150 grams
- Mexican cheese blend - 100 grams, shredded
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Oregano - 1 teaspoon
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Tomato sauce - 200 grams
- Fresh cilantro - for garnish
Steps
- Preheat the oven to 180°C (350°F).
- In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente, then drain and set aside.
- While the pasta is cooking, roast the poblano peppers directly over an open flame or under a broiler until charred on all sides. Place them in a plastic bag for about 10 minutes to steam, then peel off the skin, remove the seeds, and set aside.
- In a skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add minced garlic and cook for another minute.
- Add the ground beef to the skillet, breaking it apart and cooking until browned. Season with cumin, oregano, salt, and black pepper.
- Once the beef is cooked, mix in the tomato sauce and let it simmer for 5 minutes.
- Stuff the roasted poblano peppers with the beef mixture, then place them in a baking dish. Pour any remaining sauce over the stuffed peppers and sprinkle the shredded cheese on top.
- Bake in the preheated oven for about 15-20 minutes, or until the cheese is melted and bubbly.
- Serve the stuffed peppers over the cooked pasta, garnished with fresh cilantro.
