Ingredients

  • Pasta (penne or fusilli) - 200 grams
  • Poblano peppers - 2 large
  • Ground beef (Halal) - 150 grams
  • Mexican cheese blend - 100 grams, shredded
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Oregano - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Tomato sauce - 200 grams
  • Fresh cilantro - for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente, then drain and set aside.
  3. While the pasta is cooking, roast the poblano peppers directly over an open flame or under a broiler until charred on all sides. Place them in a plastic bag for about 10 minutes to steam, then peel off the skin, remove the seeds, and set aside.
  4. In a skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add minced garlic and cook for another minute.
  5. Add the ground beef to the skillet, breaking it apart and cooking until browned. Season with cumin, oregano, salt, and black pepper.
  6. Once the beef is cooked, mix in the tomato sauce and let it simmer for 5 minutes.
  7. Stuff the roasted poblano peppers with the beef mixture, then place them in a baking dish. Pour any remaining sauce over the stuffed peppers and sprinkle the shredded cheese on top.
  8. Bake in the preheated oven for about 15-20 minutes, or until the cheese is melted and bubbly.
  9. Serve the stuffed peppers over the cooked pasta, garnished with fresh cilantro.
