  • Chicharrón (crispy pork cracklings) - 100 grams
  • Olive oil - 2 tablespoons
  • Garlic (minced) - 2 cloves
  • Cherry tomatoes (halved) - 150 grams
  • Fresh cilantro (chopped) - 2 tablespoons
  • Lime (juiced) - 1
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese (grated, optional) - 30 grams

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside, reserving a small cup of pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  3. Add the halved cherry tomatoes to the skillet and cook for about 5-7 minutes, until they start to soften and release their juices.
  4. Stir in the cooked pasta, reserved pasta water, and lime juice. Mix well to combine all ingredients.
  5. Add the chicharrón, chopped cilantro, salt, and black pepper to taste. Toss everything together until well mixed and heated through.
  6. Serve immediately, garnished with grated Parmesan cheese if desired.
