- Tomatoes, diced - 2 medium
- Red bell pepper, diced - 1 medium
- Chili powder - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro, chopped - 2 tablespoons
- Lime juice - 1 tablespoon
Steps
- Bring a large pot of salted water to a boil and cook gluten-free pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté for 2-3 minutes until translucent.
- Add minced garlic and diced red bell pepper to the skillet. Sauté for another 2 minutes until the bell pepper softens.

- Add the shrimp to the skillet and cook for 3-4 minutes until they turn pink and opaque.
- Add the cooked gluten-free pasta to the skillet, tossing everything together until well combined. Drizzle with lime juice and sprinkle with chopped cilantro.
- Serve immediately, garnished with additional cilantro if desired.
