  • Onion, finely chopped - 1 medium
  • Tomatoes, diced - 2 medium
  • Red bell pepper, diced - 1 medium
  • Chili powder - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro, chopped - 2 tablespoons
  • Lime juice - 1 tablespoon

Steps

  1. Bring a large pot of salted water to a boil and cook gluten-free pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté for 2-3 minutes until translucent.
  3. Add minced garlic and diced red bell pepper to the skillet. Sauté for another 2 minutes until the bell pepper softens.
  4. Stir in the diced tomatoes, chili powder, cumin, salt, and black pepper. Cook for about 5-7 minutes until the tomatoes break down and the sauce thickens.
  5. Add the shrimp to the skillet and cook for 3-4 minutes until they turn pink and opaque.
  6. Add the cooked gluten-free pasta to the skillet, tossing everything together until well combined. Drizzle with lime juice and sprinkle with chopped cilantro.
  7. Serve immediately, garnished with additional cilantro if desired.
