  • Pine nuts - 30 grams
  • Garlic - 2 cloves
  • Parmesan cheese (grated) - 30 grams
  • Olive oil - 60 ml
  • Lime juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Cherry tomatoes - 100 grams

Steps

  1. Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta is cooking, prepare the cilantro pesto by combining cilantro, pine nuts, garlic, Parmesan cheese, lime juice, olive oil, salt, and pepper in a food processor. Blend until smooth.
  3. Once the pasta is cooked, reserve 1/4 cup of pasta water, then drain the pasta.
